Description
This easy Creamy Greek Pasta Salad with a tangy Greek yogurt dressing is perfect for summer barbecues, picnics, and potlucks.
Ingredients
- 1 lb pasta (fusilli, penne, or farfalle; whole wheat or gluten-free if desired)
- 1 1/4 cups plain Greek yogurt
- 1 clove garlic, minced
- 3 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 1 teaspoon dried dill
- 1/2 teaspoon dried oregano
- 3 tablespoons olive oil
- 1 1/2 cups halved grape tomatoes
- 1 seedless cucumber, chopped
- 3/4 cup pitted kalamata olives, halved
- 1/2 cup diced red onion
- 3/4 cup crumbled feta cheese
- Kosher salt, to taste
- Black pepper, to taste
Instructions
1. Cook pasta according to package directions.
2. While the pasta cooks, stir together Greek yogurt, garlic, lemon juice, red wine vinegar, dill, and oregano in a large bowl.
3. Drain cooked pasta and rinse under cold water until cooled. Drain thoroughly.
4. Drizzle pasta with olive oil and toss to coat evenly.
5. Add pasta to the bowl with the yogurt dressing.
6. Add tomatoes, cucumber, olives, red onion, and feta cheese.
7. Gently toss until everything is well combined and coated.
8. Season with salt and black pepper to taste. Adjust dill or lemon juice if desired.
9. Serve immediately or chill before serving.
Notes
For gluten-free option, use gluten-free pasta.
Best served chilled or at room temperature.
Store leftovers in the refrigerator for up to 2 days.
Add extra lemon juice before serving if the pasta absorbs dressing.
