Description

A warm, comforting casserole with tender shredded chicken, a creamy cheese sauce, and a crunchy cracker topping. This rich and satisfying dish is guaranteed to become a family favorite.


Ingredients

1.5 lbs boneless, skinless chicken breasts
1 (10.75 oz) can condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup melted butter
4 cups crushed saltine crackers, plus extra for topping
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper


Instructions

Preheat oven to 375°F (190°C).
In a large bowl, combine chicken breasts, cream of chicken soup, mayonnaise, sour cream, garlic powder, onion powder, paprika, salt, and black pepper. Stir well to coat the chicken.
Spread the chicken mixture evenly into a 9×13-inch baking dish.
Top generously with cheddar and mozzarella cheeses.
In a small bowl, mix crushed saltine crackers with melted butter. Sprinkle this mixture over the chicken and cheese.
Bake for 25–30 minutes or until the top is golden and crisp, and the chicken is fully cooked through (internal temperature of 165°F).
Let cool for 5–10 minutes before serving.


Notes

For a lighter version, use low-fat sour cream and reduced-fat cheeses.
The casserole can be assembled in advance and refrigerated for up to 24 hours before baking. Add a few extra minutes to the baking time if starting from the fridge.
Leftovers store well in an airtight container in the refrigerator for 3–4 days.
