Description

A hearty, flavor-packed salad with romaine, grilled chicken, black beans, corn, avocado, and spicy chipotle-lime dressing. A complete, no-fuss main dish in under 40 minutes.


Ingredients

6 cups chopped romaine or spring mix
4 oz cooked chicken breast (grilled or roasted)
1 can (15 oz) black beans, rinsed
1/2 cup sweet corn (canned or grilled)
1 ripe avocado, diced
2 tbsp feta cheese, crumbled
1/4 cup chopped tortilla chips for crunch
1/4 cup chipotle in adobo sauce
2 tbsp lime juice
1 tbsp cider vinegar
2 tbsp mayonnaise
1 tbsp olive oil
1 tsp honey (optional, for dressing balance)


Instructions

Chop greens into large bite-sized pieces
Dice avocado and crumble feta
Whisk dressing: combine chipotle, lime juice, cider vinegar, mayonnaise, olive oil, and honey
Toss greens with 1/3 of the dressing
Top with chicken, black beans, corn, avocado, feta, and tortilla chips
Drizzle additional dressing to taste
Adjust with more chipotle or lime for preferred heat


Notes

Use store-bought rotisserie chicken for convenience
Substitute chicken with grilled tofu or chickpeas
